Broiled Red Grapefruit with Pomegranate Syrup

Ah, the holidays are upon us, and with that comes a parade of sinful desserts. Adapted from a Prevention magazine recipe, this vibrantly colored, tangy dessert is just the ticket for a guilt-free ending to your holiday meal. It features vitamin C packed grapefruit and pomegranate, which has countless health benefits.


  • 1 cup pomegranate juice
  • 1/4 cup + 2 Tbsp. sugar
  • 2 ruby red grapefruit, peeled (white pith removed) and each cut into 4-6 round slices


  1. Combine pomegranate juice and 1/4 cup of the sugar in a small saucepan. Bring to boil. Reduce heat and simmer, stirring occasionally for 20-25 minutes, or until reduced to 1/3 cup. Cool to room temperature. Preheat broiler with rack about 4” from heat.
  2. Arrange grapefruit slices in single layer in large baking dish. Sprinkle with remaining sugar.
  3. Broil 6 minutes, or until grapefruit is flecked with brown. Arrange on serving platter and drizzle with pomegranate syrup.

Grapefruit: This breakfast favorite is an excellent source of vitamin C. In addition, grapefruits are a good source of B vitamins including vitamin B1 and folate, as well as vitamin A, calcium and potassium. The rich pink and red colors of grapefruit are due to lycopene, a carotenoid phytonutrient. Lycopene is only found in pink and red grapefruit. White grapefruit does not provide this carotenoid. Lycopene appears to have anti-tumor activity. Among the common dietary carotenoids, lycopene has the highest capacity to help fight oxygen free radicals, which are compounds that can damage cells.

Pomegranate: This beautiful fruit boasts a powerful combination of antioxidants. Research has also found that it may increase blood flow and decrease the risk of prostate cancer.
